Sorry for late reply.
1. Amaury Guichon “Mascarpone Whip” – please take 10% of the total weight of the cream. If you prefer more sweet – take 15% of the total weight of the recipe.
2. Recipe Travel cake sacher apricot passion fruit – Hans Ovando. Egg yolks – 180 grams.
