A classic combination of mango and passionfruit in a cheesecake – what can be better? The cheesecake mass here won’t be baked, but chef Aleksandr Trofimenko will share a special method of preparation that allows you to get a unique texture, which is very similar to the consistency of a baked cheesecake. The base of the cheesecake in this recipe is made out of crunchy almond crumble, which is pressed to the bottom and the sides of the mould. Such a technique will create a delicately crispy shell with an unusual modern look.
